Mixed Berry Muffins with Honey Butter
MAKES 12 MUFFINS
Everyone in the family will eat these muffins like it’s their job. They are moist and sweet and bursting with flavor, and the honey butter takes them up a notch to make them perfect for a grab-and-go breakfast or after-school snack.
Ingredients
Cooking spray, optional
2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon sea salt
2 eggs
8 tablespoons unsalted butter, melted
1/2 cup milk of your choice
1 teaspoon vanilla extract
1 cup berries of your choice, rinsed and chopped
Honey Butter
8 tablespoons softened unsalted butter
3 tablespoons honey
1/4 teaspoon sea salt
1. Preheat the oven to 400°F. Line a muffin pan with cupcake liners or spray with cooking spray.
2. Mix the flour, sugar, baking powder, and salt in a large bowl. Set aside.
3. Whisk the eggs, butter, milk, and vanilla in a medium bowl.
4. Add the egg mixture to the flour mixture and stir to combine. It might be a little lumpy—that’s okay. Gently fold in the berries.
5. Spoon the batter into the muffin cups, about three-fourths of the way up.
6. Bake for 18 to 22 minutes or until lightly golden on top. Cool for a few minutes before serving.
7. Make the honey butter: Mix the butter, honey, and salt in a large bowl with a hand mixer until light and fluffy.
8. Transfer to a small bowl. Once the muffins have cooled, spread the honey butter on top to enjoy.
