Crock Pot Turkey Chili

Serves 4 to 6

The recipe was born out of many years of cooking and tweaking my chili recipe. Chives and a touch of cocoa powder really make this chili shine.


Ingredients

  • 1 pound ground turkey

  • 2 medium-sized yellow onions, chopped

  • 3 cloves garlic, diced

  • One 14-oz can crushed tomatoes

  • One 28-oz can diced tomatoes

  • 1 red pepper, chopped

  • 1 yellow pepper, chopped

  • 1 cup frozen corn

  • 1/2 jalapeno, chopped

  • 2 cans black beans, rinsed and drained

  • 1 can kidney beans, rinsed and drained

  • 1 tablespoon cumin

  • 1 tablespoon chili powder

  • 1/4 cup chives, chopped

  • 1/4 teaspoon unsweetened cocoa powder

  • Salt and pepper to taste

Toppings:

  • Shredded cheddar cheese

  • 1 avocado, salted and sliced

  • Cilantro, chopped

1. Heat olive oil in a large skillet and sautée the onions for about 5 minutes.

2. Add the ground turkey, garlic, salt and pepper to taste, and cook until lightly browned.

3. Move turkey and onions into the slow cooker.

4. Add all of the other ingredients and give it a good stir.

5. Cook on high for 4 hours.

6. Serve in bowls and sprinkle with cheddar cheese, sliced avocados, and cilantro.
